Paleo Old-Fashioned Chicken Salad


This is my all-time favorite summer recipe and I've been eating some type of version of it since I was a child!  The only thing I do differently now is make sure my mayonnaise is a Paleo-friendly.  This is a great recipe that my whole family loves.  It's my go-to recipe for picnics or hikes.  You can make it ahead of time and it is ready for you to grab and go.  We tend to eat this salad once a week, since it is so refreshing and yummy!

Paleo Old-Fashioned Chicken Salad
Serves 8

Ingredients:
4 boneless, skinless chicken breasts
4 celery stalks, diced
4 green onions, diced
1 package of red or green grapes
2 apples (I prefer Honeycrisp or Gala)
1 cup of mayonnaise
1 lemon, juiced
salt and pepper to taste

Directions:
1.  Grill chicken for 20-30 minutes, until fully cooked.  Allow chicken to cool before slicing.

2.  In a large bowl, add celery, green onions, grapes, apples, lemon juice, mayonnaise and salt & pepper.  Mix together.

3.  Add chicken and mix.

4.  Serve or refrigerate until ready to eat.  Keeps for a couple of days.
