Paleo California Roll Recipe

Sushi is one of my absolute favorites!  But since I've been on the Paleo diet and my body doesn't handle rice very well, i've missed sushi terribly!  A few months ago, I was craving it so bad, I decided to get creative in the kitchen.  Here's what I came up with...

Ingredients:
Seaweed Sushi Nori sheets
1 tsp. Sriracha Hot Chili Sauce
1 tsp. Coconut Aminos (this is the Paleo version of soy sauce)
2 TBSP. Mayo
Crab Meat
English cucumber, sliced
avocado, sliced
bamboo sushi rolling mat
Pickled Sushi Ginger (optional)
Wasabi (optional)

Directions:
1.  Drain the liquid out of the crab meat.  Put the meat in a bowl.

2.  Mix in coconut aminos, Sriracha and Mayo.

3.  Lay your sushi rolling mat on the counter and place 1 nori sheet on top.  Place all of your ingredients onto the nori sheet and roll up.  *If you aren't sure how to roll up your sushi watch a demonstration on youtube.

4. Slice and serve.  Serve with a side of pickled ginger or wasabi.
