Random Thoughts

Wishing... It was summer today, rather than a blizzard outside!

Eating... Scrambled eggs with hollandaise sauce.  I can't wait to share my recipe with you soon!

Planning... Our summer schedule.  I can't believe we already have a ton on the calendar!

Thinking... How can my sweet girl be 10 years old???

Listening to... Toby Mac's Light Shine Bright.  We went to his concert Friday night and it was amazing!


The Whole Coconut Cookbook by Nathalie Fraise

Back in November, I started strictly following the Paleo diet.  One of the things my doctor also confirmed was that I'm allergic to almonds.  This was a major bummer since the Paleo diet uses a lot of almond flour and almond butter in recipes.  I've had to find alternatives, which there aren't too many of them out there.  However, coconut has been a huge blessing!  There aren't many coconut cookbooks out there either, so when this book came along, I was really excited!  The book begins with a description of the different types of coconut...aminos, butter, cream, flour, milk, oil, etc.  This is very helpful for understanding how to use coconut in your cooking.  Although the recipes in the cookbook are dairy-free and gluten-free, I also wish they were grain-free.  Some recipes use rice flour, quinoa, millet, etc.  I was hoping that it would be more of a Paleo cookbook, but there are some recipes that I can use.

101 Ways to Have Fun by Faithgirlz

This book is intended for girls between the age of 8-12 years old, which my daughter falls right in the middle of.  She still enjoys having friends over but they're changing from playing with toys to not being so sure what to do.  Since Barbies and dolls are not so fun to play with anymore, I was excited for her to read this book and find other things to do with her friends.  There are a variety of ideas for girls to do, from baking to crafting or planning a sleepover.  Although the book is intended for things they can do with their friends, you could also adapt some of the ideas to a mom/daughter day of fun!

Wearing... My husband's sweatshirt because it is big & cozy!  Sweatpants...not so cute, however practical wins!  And my hair pulled up.

Hoping... My kids don't hurt themselves or have to visit an ER in our future.  As I type, they are using their sled to slide down our back deck stairs.  The giggles stop me from saying anything!

Needing... A new show to watch.  Any recommendations?

Dreaming... About using my home to entertain more and a place to gather people.

Creating... Spring in my house!

Making... A list for the grocery store.  What's on your Easter menu?
