Paleo Banana Nut Pancakes


My kids absolutely love pancakes, but this momma can't have regular pancakes!  I've tried lots of recipes and have finally come up with one of my own that knocked their socks off!  My kids are honest critics and when they say, "Momma, this is so good" I want to jump for joy!  Plus, for this Paleo girl, I'm able to enjoy some pancakes too!


Paleo Banana Nut Pancakes
Serves 4-6

Ingredients:
8 eggs
1/2 cup of coconut milk
6 Tbsp. coconut oil
2 Tbsp. maple syrup
2 Tbsp. almond butter (*I'm allergic to almonds so I substitute with peanut butter or cashew butter)
2 bananas, mashed
1/2 cup coconut flour
4 Tbsp. arrowroot flour
1 tsp. baking powder
1/2 tsp. sea salt
1/2 cup pecans, chopped

Directions:
1.  Mix all the dry ingredients together in a small bowl.

2.  Mix all the wet ingredients together in a medium sized bowl.

3.  Add the dry ingredients to the medium bowl.  Whisk until it mixes together.

4.  Heat skillet.  Add coconut oil to the pan. 

5.  Cook on medium heat.  Pancake batter is runnier than normal pancake batter, but it is very easy to work with.  

6.  Top with sliced banana & maple syrup.
