Healthy Living

At the end of 2015, I made another change in my life.  This one was a health change.  I was feeling tired, weary, snappy at my children, lacked patience and energy, overwhelmed by things that used to not overwhelm me, and overall not in the best place.  Part of me chalked it up to just being a wife, mom, and homeschool teacher.  Those are all things that causes one to feel tired, weary and overwhelmed.  But I knew it was more than that.  I happened to take a class in November about the thyroid.  I have thyroid issues…I have hyperthyroidism and Hashimoto’s disease.  The doctor that spoke was a holistic doctor who specializes in applied kinesiology and I decided to met with her afterwards because I knew she could help me.  Boy, was I right!  She has helped me so much and it is completely different than anything my general doctor would do.
The only downside to this was that my diet had to change.  She put me on a very strict diet.  For the last 3 years, I have stayed away from gluten and soy, but she added a bunch more to the list, NO…dairy, caffeine (coffee, tea, chocolate), sugar, garlic, corn, and rice.  Basically, I’m to eat a very strict Paleo diet with a maximum of 40 carbs a day.  She first asked me to do it for 3 weeks and we would see how my body would respond.  After the three weeks, we would reassess to see if I could put any of these ingredients back into my diet.  I was a little worried that I might die of hunger or just feel hungry all of the time, but I was willing to give it a try. Here’s what I learned in just 3 short weeks…
ONE…I only had that hungry feeling for the first couple of days. I chalked it up to my body trying to detox and adjusting to the new way of eating.
TWO…My cousin who lives by the Paleo diet, told me I wouldn’t need to snack between meals if I eat the right foods for every meal. I kind of didn’t believe him…sorry B!  I tend to want to snack in the afternoon or after dinner. Let me just say, he was completely right! If we give our bodies exactly what it needs, we are fuller for much longer and have a feeling of contentment that causes us to not need to snack.
THREE…Paleo cooking requires planning and time.  Bottom line, if you want to eat good you have to make time.  I cook 2 meals (breakfast & dinner) every day and eat leftovers for lunch.
FOUR…As a Paleo eater, there are a lot less options (refer to the list of no-no’s), but you eat so much healthier and 100 percent real food, no crap or junk! The quality food makes you feel so much better!
FIVE…I’ve learned so much more about how our food is produced and prepared, which is good, but also completely scary. The Paleo diet lands on the good side!
SIX…Although I’ve had to give up a lot, I have tried some new amazing foods and recipes. My family also has enjoyed it all!  Praise God, because no one likes whiny kids!
SEVEN…Sugar and soy products are just about in everything, when it doesn’t really have to be that way.
EIGHT…I used to be a lover of cheese! I thought I would die without cheese. I now see cheese in a whole other light. Food is still really good without cheese. Case in point, a burger. Pre-diet, cheese would always be on my burger. I realized that a burger still tastes great without cheese. I was literally dumbfounded the first time I ate a burger without cheese – and enjoyed it!
NINE…Bacon is my favorite! Don’t buy the cheap stuff, invest a few more dollars to buy the good stuff. Applewood smoked bacon is my favorite.
TEN…Finding 100 percent grass-fed meats are difficult to find, but are the absolute best for you! Look for them and buy them whenever you get a chance to!
Lastly, this isn’t a diet or some fad for me, it’s my new lifestyle of healthy eating, which in turn, equals to healthy living.  I’m 6 weeks in and each day I feel better than the day before.  I’m not yet where I want to be but I can tell that I’m on my way
